Wondering ’61
Wondering ‘61 The Bowser Chronicles on 61 Anybody with a television in the 1980’s knows who Bowser was, but these Chronicles are not about Sha Na Na or its lanky bass. If you have been corrupted by video games, you may have thought these Chronicles were about the main antagonist in Super Mario Brothers.
Chicken Salad Stuffed Tomatoes
Ingredients - 6 beefsteak tomatoes, (1/2 to 3/4 lb. each) - 4 cups chopped rotisserie chicken - 1 1/2 cups chopped tricolor bell pepper mix (from 1 [8-oz.] container) Instructions Remove and discard tops of tomatoes; then core and seed them.
Chicken Bacon Ranch Pasta Salad
Ingredients - 8 ounces rotini uncooked - ½ pound bacon - Meat from one rotisserie chicken - ¼ cup sharp cheddar cheese shredded; plus, extra for garnish Instructions Bring a large pot of salted water to a boil, and cook the pasta according to the package instructions. Drain and rinse with cold water to stop the cooking process.
Rotisserie Chicken and Dumpling Casserole
Ingredients - Meat from one rotisserie chicken - ½ cup (1 stick) unsalted butter; - 2 cups self-rising flour; - 2 cups milk; Instructions Preheat the oven to 350F. Remove meat from rotisserie chicken and set aside.

This Summer, my son Ben is working close to home, so he can come home every day for lunch. One day a week, he brings his co-worker, so I make something a little special on those days.

This beautiful miniature Australian Shepherd dog is named Emmett Kelly. Emmett the dog is named after the famous American circus clown.
